Within the scope of issues referring to the supply of tourist destinations, particularly with perishable goods, the authors advocate the introduction of an uninterrupted chain of refrigeration plants as a sole guarantee that by the time of sale and consumption the fruit be of same quality and looks. An optimum solution the authors consider the introduction of freight (goods) exchanges i.e. markets to have registered all available capacities of the suppliers on one side and quantities and flows of goods of the users on other.
